Canned Citrus Sections (Oranges & Grapefruit)
Yield: Approximately 2 pounds of fruit per quart
Ingredients

Firm, mature, sweet oranges and/or grapefruit (high quality for fresh eating)

Water, citrus juice, or prepared syrup (very light, light, or medium)
Preparation

Select Fruit: Use ripe, firm oranges and/or grapefruit.

Best flavor: combine equal parts orange and grapefruit sections.

Grapefruit may also be canned alone.

Peel & Trim: Wash fruit thoroughly, peel, and remove all white membrane/tissue to prevent bitterness.

Prepare Liquid:

If using syrup, prepare your choice of very light, light, or medium syrup.

Bring syrup to a boil before use.

Packing

Fill jars with prepared citrus sections.

Cover with hot water, juice, or hot syrup, leaving ½-inch headspace.

Wipe rims, adjust lids, and process according to recommended canning times for citrus.
