Pressure Dial Gauge
Easy-to-read pressure gauge lets you know when the internal pressure is down to zero and the cooker/canner is safe to open.
Top Handle
The top handle is used to place or remove the cover on to, or off of the bottom only. Never lift the entire cooker by using the top handle.

The cover is secured with large, stay-cool phenolic wing nuts. These will require lubrication from time to time.
Regulator Weight
This is made up of the round selective pressure regulator weight and the vent pipe. The vent pipe is attached to the cover and the pressure regulator weight sits on top of the vent pipe.

FAQs

What heating sources can I use? (Non-Electric)

An indoor stovetop that is electric, gas, or flat top range will work. Do not use a glass top stove as that will damage the surface. For separate heating source, use 12,000–24,000 BTUs. Do not use induction.

Can I use a regular lid on my pressure cooker/canner for water bathing?

Yes, as long as it covers the pot. Even a cookie sheet can be used.

When using reverse osmosis water for canning

Add 1 tsp table salt to water before placing it in the canner.

What alternative heat sources can I use?

Nemco 6310-1-12 (~$360) and Cadco (~$180)CSR-3T COUNTERTOP burners from Amazon are recommended. Nemco has better heat transfer.

What parts should I keep on hand for replacement?

Over pressure plug should be replaced yearly or if cracked/hard. Never reuse a blown plug. Replace steam gauge if needle sticks, doesn’t return to zero, or malfunctions.

Should my steam gauge be tested?

If using a petcock, yes. If using vent pipe and weight, no. Gauge is +/- 2 lbs accurate and only for reference to know when pressure is zero.

What lubrication should you use on the metal-to-metal seal?

We recommend olive oil or petroleum jelly.

How do I replace my steam gauge?

Use 9/16 wrench to remove. Wrap threads on new gauge with teflon tape, install and tighten securely.

How do I clean my pressure cooker?

Mix equal parts of water and vinegar, bring to a boil, or cream of tartar solution. Also clean with aluminum cleaner or steel wool pad.

What causes my canner to discolor inside?

Minerals in hard water, especially magnesium and calcium.

What is the number stamped on the bottom of my handle (76-09)?

Caused by ejector pin during manufacturing. Stamped with numbers 1–4.

How durable is the color coating on the canner?

Extremely durable. Tested per ASTM standards for heat adherence.

Why is the 910 and 915 not suitable for canning smoked fish?

Requires 16–22 quart canner per National Center for Home Food Preservation. Other fish are fine.

What is the difference between a 921 and a 925?

The 925 has more liquid capacity, useful for pressure cooking.

What kind of paint is used on the colored canners?

PFAS-free coating, FDA approved for incidental food contact.

What are the vent pipes made of?

Brass, plated.

Why do we not anodize the canners?

FDA hasn't officially approved anodized aluminum, though it's commonly used in cookware.

What type of aluminum alloy is used for canners?

A356, also known as A13560 under the UNS standard.

Why do canners say 'for commercial use only'?

Originally not for restaurant use. Label used for liability and training purposes.

Is there lead in the canners?

Yes. They contain 60 PPM, below the 90 PPM allowed maximum.

Can I replace pins myself?

Yes. Knock them out from the left, insert from the right. Use a proper size center punch.

What determines processing time and pressure above 1,000 ft?

The recipe.

Do the colored pressure cookers use lead paint?

No lead paint is used.

Is the 910 large enough to be considered a 'safe' canner?

Yes. It fits 4 quart jars, meeting USDA and NFPC safety requirements.

Do I have to reprocess jars that didn’t seal?

Yes. Despite manual error on page 44, reprocess for the full processing time.

Can I pressure can milk or milk products?

What is the thread pattern of the vent pipe?

1/8” NPT

I cannot remove my lid. It is stuck.

Instructions are in the manual (page 21). Use the claw of a hammer on the prong-cover it with a washcloth to prevent damage to your canner or the seal. You may have left the weight on too long or didn’t apply enough lubricant. Or you can use a wooden flat spatula to prevent damage.

Why is there no steam after venting for 10 minutes?

You should only vent for 10 minutes. Wave paper towel over the vent pipe to test. Steam visibility varies. Try lowering the heat slightly.

Lid does not fit properly and won’t seal.

Lid won’t sit flat. Tighten wing nuts two at a time across from each other until gap is even, then tighten all again twice.

Why did my canner start leaking steam at the seal after years?

1) Beveled edge may be dirty. Clean and lubricate. 2) Canner may have boiled dry and warped.

Why did I hear a thermal crack sound from my canner?

Cover not on tight. Ensure proper cleaning, lubrication, and even lid tightening.

My sterilizer/pressure cooker is not sealing?

Try to heat the bottom up until the top is warm to the touch, then assemble the cover. As it heats and expands, it should seal.

Do I need to see a 100% visible column of steam before adding the weight?

It’s normal not to see steam. Listen for hissing, hold paper towel 1” over vent pipe; if condensation appears, start 10-minute timer.

My weighted gauge does not work at 15 lbs.

Send a new weighted gauge with a center dimple. Older versions may be out of spec.

Why does the lid leak?

Cookers may need a break-in period. Leaks can occur during the first several uses as the aluminum expands and seals.

What causes my jars to siphon?

Extreme temperature changes, jars packed too full, air bubbles, tight food packing, or high processing temperature.

What Scotch Brite can be used to clean the canner?

The red or burgundy.
